Scraped Surface Heat Exchangers, also called votator units or votators, are used to heat or cool a continuously moving product by providing a large heat transfer surface for a small amount of product in a confined space. Typically made of Stainless Steel, they incorporate single or multiple product chambers. Inside each chamber is a scraper device driven by an external motor. The blades are made of a rigid plastic material to prevent damage to the scraped surface. This material is FDA approved in the case of food applications. Product is forced through the unit by a positive displacement pump. Heating or cooling medium flows in a jacket outside of the product chamber. A stainless steel cover protects the insulation of the outer surface. In operation, the rotating shaft has blades which continuously scrape product film from the heat transfer tube wall, thereby enhancing heat transfer, and agitating the product to produce a homogenous mixture. Product film is continually scraped from the heat transfer wall to induce high heat transfer rates while constant agitation causes turbulent flow and more consistent heating or cooling. With scraped surface heat exchangers or votator units, it is possible to significantly reduce labor costs by eliminating expensive artisan skills.
